Cabernet Sauvignon
This is a very special Cabernet Sauvignon for Woodinville Wine Cellars! In early barrel tastings of the 2006 Cabernets, I realized this was a special vintage but six of these barrels were truly outstanding. These barrels were set aside to create this extraordinary 2006 Reserve Cabernet. The grapes came from Stillwater Creek blocks 33 and 40, as well as our favorite Cabernet block from Conner Lee planted in 1987. With each sample, the complexity and weight continued to increase so I choose to leave the wine in barrel a bit longer than usual. The final outcome was truly exciting!
As soon as you pour it in the glass, you will notice the rich garnet color. The nose starts with classic Cabernet qualities, increasing to deep mocha, cassis, and black cherries, tied with a candied finish. The palate starts tight with laser like smoothness while the flavors build on the palate showing firm tannins and levels of complexity. This structure will allow the wine to age beautifully for up to a decade. For maximum enjoyment, decant for an hour before drinking.
